Necessity is definitely the mother of invention and nobody knows that better than a broke college kid. With only the kitchen basics like a microwave and fridge available, sometimes it’s hard to make tasty nutritious food and you end up on a much less appetising diet of instant noodles. But the good news is that technology is here to save the day. With just a microwave and some basic ingredients, you can create some delicious meals that will power you up for an early class or keep you fuelled through late-night cram sessions. 

Eggs are a protein-packed ingredient which also contain several vitamins and minerals that aid eye and heart health. The antioxidants help to build up strength and immunity and the best part is that they’re so versatile, that you can always find a new way to eat them. 

Try these 4 easy egg dishes that you can make using only a microwave.

Egg Strata

Ingredients:

  • ¼ cup croutons
  • 1 egg
  • 1 slice ham 
  • 1 tbsp Cheddar cheese
  • Salsa (optional)

Method:

  • Sprinkle salt in bottom of microwave-safe mug. Add half of the croutons.
  • Whisk egg, ham and cheese with fork in small bowl; pour into mug.
  • Top with remaining croutons. Cover lightly with plastic wrap; place in microwave.
  • Microwave on high until egg is set, about 1 minute. 
  • Let stand for 20 seconds before serving. Serve with salsa, if desired.

Mug Breakfast

Ingredients:

  • 1 slice of bread, cubed
  • 2 tbsp seeded and diced tomato
  • 2 tbsp shredded Cheddar cheese
  • 1 tbsp finely chopped green onion
  • 1 egg, beaten
  • 2 tbsp milk

Method:

  • Toss bread with tomato, cheese and green onion. 
  • Transfer to a microwave-safe mug. 
  • Whisk egg with milk; pour over filling.
  • Microwave on High for 60 seconds; let stand for 10 seconds. 
  • Microwave for an additional 60 seconds or until set.

 

Egg Burrito

Ingredients:

  • 1 large 
  • 1 flour tortilla 
  • 1 tbsp shredded cheese
  • 1 tbsp salsa

Method:

  • Line or grease a microwave-safe bowl
  • Press the tortilla into the bowl. 
  • Break the egg into centre of the tortilla and beat gently with a fork until blended.
  • Microwave on high for 30 seconds. 
  • Stir and microwave for 30 seconds more.
  • Remove the and top with cheese and salsa before folding. 

Microwaved Egg-Stuffed-Peppers

Ingredients:

  • 2 red peppers
  • 4 eggs
  • Salt and pepper to taste

Method:

  • Slice tops off peppers. Remove seeds inside the peppers.
  • Place peppers upright on a microwave-safe plate. Microwave on high for 3 minutes. 
  • Invert and drain on a paper towel.
  • Place peppers upright on a microwave-safe plate. Break 2 eggs in each pepper. Pierce egg yolks several times with a fork. Season with pepper and salt.
  • Microwave on medium for 5 minutes until eggs are almost cooked, about 5 minutes. 
  • Let stand for 2 minutes, then serve.
