If you're making festive desserts at home, why not try something new and contemporary? Sevaiyan is a versatile ingredient often used in Indian desserts, and its fine, thread-like texture can be creatively shaped into edible containers. These baskets are perfect for serving a variety of fillings, such as fruits, ice cream, or creamy desserts like rabri or kheer.
Recently patissier Guntas Sethi shared the recipe for a practical Sevaiyan Katori with Sitaphal Rabri, which uses fine, ground up sevaiyan to make an edible bowl. This is the perfect substitute for a tart base if you're looking to make desi desserts.
To create a sevaiyan katori, sevaiyan is usually mixed with a binding agent like sugar syrup or melted chocolate and then shaped around a mold to set. Chef Sethi uses ghee to bind the sevaiyan. Once they are firm, the katoris maintain their shape and offer a delicate, crunchy texture that pairs well with both sweet and savoury fillings.
These edible baskets can be filled with anything, from homemade rabdi and custard to kheer. You can also fill them with fresh fruit and whipped cream or traditional Indian sweets like shrikhand or dry fruit mixes. The versatility of these katoris makes them an ideal choice for entertaining guests!
