Bored Of Your Regular Egg Recipes? Try Poached Egg Tartines

Egg is an integral part of Indian cooking. Be it a simple boiled egg for breakfast or a spicy curry for lunch, this versatile food has never disappointed us. Not only in the main course, egg recipes such as egg bonda, omelette, egg bhurji and egg toast are also perfect for snacks. Apart from being made into irresistible recipes, it also has other major culinary purposes. From being an essential ingredient for baking to thickening food mixtures and adding flavour, egg is a must-have item in the kitchen pantry.  

But if you bored of your regular egg recipes and want to try something new, here is a super delicious recipe for you, called poached egg tartine by Chef Ashish Das, Café Calma. The name of the dish would have made you think it’s a complicated recipe that cannot be made in normal kitchen, but the word tartine simply means “open-faced sandwich”. This lip-smacking recipe is made with a crunch of multigrain sourdough topped with oranges marmalade spread, smoked Atlantic salmon and poached egg with hollandaise sauce.

Here is the recipe poached egg tartine: 


  • 2 eggs 
  • 1 slice of multigrain sourdough 
  • Butter for toasting 
  • 1 smoked Atlantic salmon 
  • Orange zest and sugar for orange marmalade 
  • ½ lemon 
  • 1 tsp tarragon reduction 
  • Clarified butter as required 
  • Water and vinegar for poached egg 


For Orange Marmalade 

  • Mix orange zest, segments and sugar in a sauce pan. 
  • Bring the mixture to a boil and let it simmer for 5-7 minutes. 
  • Let it cool it down.

For Poached Egg 

  • In a pan boil water and vinegar mix (2:1) and reduce to simmer. 
  • Crack an egg in the simmering water. 
  • Allow the egg to cook for 3-4 minutes with firm white and soft runny yolk. 
  • Remove the egg from water and use immediately.

For Hollandaise 

  • Take egg yolks and tarragon reduction in a bowl. 
  • Place the bowl on a double boiler and whisk the yolks by adding clarified butter till it emulsifies. 
  • Finish it off with a squeeze of lemon.

For Poached Egg Tartine 

  • Take a slice of multigrain sourdough and toast it lightly with butter. 
  • Spread some of the orange marmalade on the slice. 
  • Place smoked salmon on top of the marmalade. 
  • Place poached egg on top of salmon. 
  • Finish it off with hollandaise on the egg and garnish with microgreens.
