Apple Pie Bread Is The Easy Fruit Cake That You Need

By combining apples with a classic batter, you can achieve a beautifully moist cake that tastes just like an apple pie. And you don’t have to worry about all the pesky pie crust making either.

The fresh fruit breaks down during the cooking process and gets gently caramelised, adding natural sweetness and moisture to the cake. The cinnamon adds a delicious spiciness, but you can also experiment with other spices like cloves, star anise or ginger for an extra touch of warmth. This recipe is super simple to make at home and you can also add in nuts or seeds for extra nutrition.

Ingredients

  • ⅓ cup light brown sugar 
  • 1 teaspoon ground cinnamon
  • ⅔ cup white sugar
  • ½ cup salted butter, softened
  • 2 eggs
  • 1½ teaspoons vanilla extract
  • 1½ cups all-purpose flour
  • 1¾ teaspoons baking powder
  • ½ cup milk
  • 1 apple, peeled and chopped 

Method:

  • Preheat oven to 190 degrees C and grease a mid-sized loaf pan
  • Blend the brown sugar and cinnamon together and keep it aside.
  • Cream the white sugar and butter together with an electric mixer until light and aerated.
  • Beat in the eggs one at a time until incorporated.
  • Add in the vanilla extract and stir it through the batter. 
  • In a separate bowl mix the flour and baking powder together and then stir the creamed butter into the dry ingredients.
  • Add the milk and whisk until smooth.
  • Pour half the batter into the loaf pan and sprinkle in half the chopped apples over the top. Dust with the brown sugar mixture (again, about half the quantity)
  • Pour the remaining batter over the layer of apples and then layer on the remaining apples and brown sugar. 
  • Gently pat the top apple layer into the batter.
  • Bake for 30-40 minutes and serve warm with cream or ice cream.
