3 tablespoon olive oil
1 pound boneless, skinless chicken breasts cubed
1 white onion, diced
4 celery, diced ribs
1 green bell pepper, diced
4 garlic cloves, minced
2 teaspoon ground cumin
0.5 teaspoon chili powder
0.25 teaspoon cayenne pepper
4 cup Chicken Broth
2 can white cannellini beans, drained
1 cup frozen corn
1 can green chiles
8 ounce cream cheese, cubed

Directions : White Chicken Chili Recipe

STEP 1.In a dutch oven over medium heat, cook chicken and onion in oil until lightly browned.

STEP 2.Add garlic; cook 1 minute longer. Stir in the broth, chiles, cumin, oregano and cayenne; bring to a boil.

STEP 3.With a potato masher, mash one can of beans until smooth and pour it into a sauce pan

STEP 4.Add remaining beans to the saucepan. Simmer for 20-30 minutes or until chicken is no longer pink and the onion is tender.

STEP 5.Top each serving with cheese and, if desired, jalapeno pepper.

STEP 6.To use, partially thaw in the refrigerator overnight. Heat through in a saucepan, stirring occasionally; add broth or water if necessary.
