Ingredients for White Chicken Chili Recipe

  • 3 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts cubed
  • 1 white onion, diced
  • 4 celery, diced ribs
  • 1 green bell pepper, diced
  • 4 garlic cloves, minced
  • 2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper
  • 4 cup Chicken Broth
  • 2 can white cannellini beans, drained
  • 1 cup frozen corn
  • 1 can green chiles
  • 8 ounce cream cheese, cubed
  • 1/4 cup freshly chopped cilantro

Directions: White Chicken Chili Recipe

  • STEP 1.In a dutch oven over medium heat, cook chicken and onion in oil until lightly browned.
  • STEP 2.Add garlic; cook 1 minute longer. Stir in the broth, chiles, cumin, oregano and cayenne; bring to a boil.
  • STEP 3.With a potato masher, mash one can of beans until smooth and pour it into a sauce pan
  • STEP 4.Add remaining beans to the saucepan. Simmer for 20-30 minutes or until chicken is no longer pink and the onion is tender.
  • STEP 5.Top each serving with cheese and, if desired, jalapeno pepper.
  • STEP 6.To use, partially thaw in the refrigerator overnight. Heat through in a saucepan, stirring occasionally; add broth or water if necessary.
