A flovorful and aeromatic shahi veg.biryani is very popular dish mugul empire.veg. biryani cooked with veggies and indian spices .if u biryani and pulav lover u will surely enjoy this recipe.
STEP 1.Wash the rice with water and soak it for 1 hour.
STEP 2.keep the pan on the gas ti heat .Now add ghee.when the ghee is hot .Add all the spices .Then add the rice and rost it.
STEP 3.3)Add 2 cups of water and cook on low flame till 80%. Add salt as per your taste.cook till above water evaporate then closed the lid .till rice cooked .
STEP 4. Let open the lid and let Cool little .
STEP 5.take a kadhai and add ghee 1tbsp ,1 tbsp raisins and add cooked rice,fried cashew,fried almond and saffron milk .Mix and keep aside.
STEP 6.Fry little paneer and keep aside.
STEP 7.Take a kadhai and add ghee,garli,chopped chopped garlic saute little then add blanched carrot,beans ,peas,cauliflower.add red chilly powder,turmuric powder biryani masala ,salte to taste.
STEP 8.Take a bowl and add mint chatuny and curd .
STEP 9.Whisk properly and keep aside. Pour the mint and curd mixture into the vegetable.
STEP 10.Take a pan for biryani
STEP 11.Grease with ghee put some flavourl rice layer
STEP 12.Put some corriander leaves chopped.fried onion,ghee
Vegetable layer .layer the layer in the same way for the second time.add fried onion,cashew, almond,green coriander.
STEP 13.Take a handi in edges of handi apply for wheat flour dough closed the lid .In gas stove put tava and keep handi ,keep handi cook from 15 to 20 min to slow flame .and serve hot
