• 1 Batch rye puff pastry, prepared and chilled
• 12 ounce Small yukon gold potatoes, or other small yellow flesh potatoes
• 4 ounce Uncooked bacon, cut into 1/2" wide matchsticks
• 1 Onion, peeled and diced
• 2 Garlic cloves, peeled and sliced thin
• As required Salt, to taste
• 3 tablespoon Creme fraiche
• 4 ounce Brie, or other semi soft, soft rind cheese, sliced into 1/2 thick slices
• 0.5 cup Gruyere cheese, grated
