• 0.5 cup Chopped green onion save whites to garnish finished tortilla green part only
• 1 pound Shrimp peeled and deveined
• 12 Large eggs
• 0.75 cup Heavy whipping cream
• 2 teaspoon Creole seasoning
• 2 tablespoon Butter softened
• 0.5 cup Shredded monterrey jack cheese
• 1 tablespoon Chopped cilantro for garnish
• Whites of scallions sliced for garnish
