• 4 tablespoon Olive oil
• 1 Medium Onion, Chopped
• 450 gram Cooked white beans such as cannellini or butter beans
• Salt and freshly ground black pepper
• 1 Juice lemon
• 2 teaspoon Caster sugar
• 100 gram Sun blush tomatoes in oil, drained and roughly chopped
• 1 Large handful of wild rocket
