Sea salt
1 large white onion, thinly sliced
2 tablespoon olive oil
2 tablespoon Butter
Sea salt and freshly cracked black pepper

Directions : Lyonnaise Potatoes Recipe

STEP 1.Wash and scrub potatoes thoroughly.

STEP 2.Place in a medium pot and cover with water and sea salt.

STEP 3.Bring to a boil and completely lower temperature until potatoes are barely simmering.

STEP 4.Cook for about twenty minutes, until potatoes are almost tender but still firm.

STEP 5.Drain and cool slightly.

STEP 6.Peel and slice into rounds ¼ ‘ thick.

STEP 7.In a large skillet, heat half the oil and half the butter over medium setting.

STEP 8.Add the potatoes and sauté until golden, about 10- 15 minutes, turning often to evenly cook.

STEP 9.Meanwhile, in a small skillet combine the remaining oil and butter and sweat the sliced onion on low heat , until very soft and golden, about 10 minutes.

STEP 10.Stir often for even browning.

STEP 11.When potatoes and golden, add the onions to the potatoes and continue to cook for a couple of minutes , just to develop flavour.

STEP 12.Season with salt and pepper and toss in parsley.
