Lyonnaise means "from Lyon", or "Lyon-style", after the French city of Lyon. The potatoes are often par-cooked before sautéeing, else raw cooked in the pan

Ingredients for Lyonnaise Potatoes Recipe

  • 2 pound large white potatoes , waxy variety
  • As required Sea salt
  • 1 large white onion, thinly sliced
  • 2 tablespoon olive oil
  • 2 tablespoon Butter
  • As required Sea salt and freshly cracked black pepper
  • As required Large handful fresh chopped Italian parsley

Directions: Lyonnaise Potatoes Recipe

  • STEP 1.Wash and scrub potatoes thoroughly.

  • STEP 2.Place in a medium pot and cover with water and sea salt.

  • STEP 3.Bring to a boil and completely lower temperature until potatoes are barely simmering.

  • STEP 4.Cook for about twenty minutes, until potatoes are almost tender but still firm.

  • STEP 5.Drain and cool slightly.

  • STEP 6.Peel and slice into rounds ¼ ‘ thick.

  • STEP 7.In a large skillet, heat half the oil and half the butter over medium setting.

  • STEP 8.Add the potatoes and sauté until golden, about 10- 15 minutes, turning often to evenly cook.

  • STEP 9.Meanwhile, in a small skillet combine the remaining oil and butter and sweat the sliced onion on low heat , until very soft and golden, about 10 minutes.

  • STEP 10.Stir often for even browning.

step 11

  • STEP 11.When potatoes and golden, add the onions to the potatoes and continue to cook for a couple of minutes , just to develop flavour.

  • STEP 12.Season with salt and pepper and toss in parsley.
