- 2 pound large white potatoes , waxy variety
- As required Sea salt
- 1 large white onion, thinly sliced
- 2 tablespoon olive oil
- 2 tablespoon Butter
- As required Sea salt and freshly cracked black pepper
- As required Large handful fresh chopped Italian parsley

How to Make Lyonnaise Potatoes Recipe
STEP 01
Wash and scrub potatoes thoroughly.
STEP 02
Place in a medium pot and cover with water and sea salt.
STEP 03
Bring to a boil and completely lower temperature until potatoes are barely simmering.
STEP 04
Cook for about twenty minutes, until potatoes are almost tender but still firm.
STEP 05
Drain and cool slightly.
STEP 06
Peel and slice into rounds ¼ ‘ thick.
STEP 07
In a large skillet, heat half the oil and half the butter over medium setting.
STEP 08
Add the potatoes and sauté until golden, about 10- 15 minutes, turning often to evenly cook.
STEP 09
Meanwhile, in a small skillet combine the remaining oil and butter and sweat the sliced onion on low heat , until very soft and golden, about 10 minutes.
STEP 10
Stir often for even browning.
STEP 11
When potatoes and golden, add the onions to the potatoes and continue to cook for a couple of minutes , just to develop flavour.
STEP 12
Season with salt and pepper and toss in parsley.
