Ingredients For Kodo millet with avacado dip and sweet potato chips Recipe
as required For kodo millet Khichdi
0.5 cup Kodo millet
1 nos Spring onion White chopped
1 nos Spring onion green chopped
1 tablespoon Oil
1 tablespoon green peas shelled
1 nos green chilli finely chopped
as required salt to taste
as required For sweet potato chips
200 gms Sweet Potato
2 tablespoons olive oil
1 teaspoon garlic crushed
1 teaspoon ginger grated
as required Pinch of turmeric powder
3 teaspoons chilli powder
1 teaspoon coriander powder
1 teaspoon jeera powder
1 teaspoon Garam masala
as required salt to taste
as required For paneer
0.5 litre Homemade paneer cubes from cow milk
as required salt to taste
2 teaspoons Freshly crushed black pepper powder
1 tablespoon olive oil
1 cup For Avocado dip
1 nos Avacado chopped
1 nos Onion Chopped
1 nos Tomato chopped
as required salt to taste
1 teaspoon freshly crushed pepper
1 teaspoon Lemon juice
as required For Garnish
1 nos onion finely chopped
0.5 nos Tomato finely chopped rings
5 nos Mint leaves to
1 teaspoon spring onion chopped
5 nos Green grapes cut into halves
Directions : Kodo millet with avacado dip and sweet potato chips Recipe
STEP 1.For kodo millet
STEP 2.Add kodo millet to a bowl. Wash with water thrice. Add 1 1/2 cup water . Soak it for 8 hours. In a pan add oil. Add onion whites, saute for a second, add green peas and green chilli. Roast for a second. Add kodo millet with water. Add salt. Mix well. On slow flame let it cook with half cover. Stir occasionally. Cook till all water is evaporated. Off the flame. Cover it for 10 minutes. Add Spring onion greens.
STEP 3.For sweet potato chips
STEP 4.Peel out the skin of sweet potato. Cut round chips. Add to a chips to a bowl. Wash the chips in water 2 to 3 times. Arrange on cloth, tap with cloth to dry. In a bowl add olive oil, garlic, Ginger, turmeric powder, chilli powder, jeera powder, coriander powder and garam masala. Don't add salt at this moment. Marinate chips with garlic paste. Cover and set it aside for 1/2 hour Grill it on griller brushing with oil till you get brown spots. For crispness bake chips for 5 to 10 minutes in preheated oven @180*. Keep an eye so that chips don't burn. Now Sprinkle salt.
STEP 5.Avacado dip
STEP 6.Scoop out avacado, mash avacado with fork, add onion , tomato, salt, pepper powder, lemon juice.mix well
STEP 7.For Paneer
STEP 8.Add salt, black pepper powder and olive oil. Mix well.
STEP 9. Grill paneer cubes.
STEP 10.For assembling
STEP 11.In a serving plate make circle with kodo millet khichdi, Top up with some avocado dip. Arrange sweet potato chips and paneer pieces . Garnish with Spring onion greens, tomato, onions and mint leaves.
STEP 12.Enjoy this healthy dish for lunch or dinner.
