Cooking Directions

• STEP 1.Preheat the oven to 375°F (190°C) and grease a baking dish.
• STEP 2.In a large skillet, cook ground beef over medium heat until browned.
• STEP 3.Add diced onion, minced garlic, chili powder, cumin, salt, and pepper to the skillet and cook for another 2-3 minutes.
• STEP 4.Stir in black beans, corn, and enchilada sauce, and simmer for 5 minutes.
• STEP 5.In a separate bowl, prepare the cornbread batter according to the package instructions.
• STEP 6.Pour half of the cornbread batter into the greased baking dish.
• STEP 7.Spread the beef and bean mixture over the cornbread batter.
• STEP 8.Pour the remaining cornbread batter over the beef mixture.
• STEP 9.Sprinkle shredded cheese on top.
• STEP 10.Bake for 25-30 minutes, or until the cornbread is cooked through and the cheese is melted and bubbly.
• STEP 11.Remove from the oven and let it cool for a few minutes before serving.
• STEP 12.Serve with salsa and sour cream, if desired.
