• 1 Ham hock or a bone saved from a spiral sliced ham
• 1.5 cup Dry black eyed peas
• 4 cup Chicken or vegetable broth
• 1 tablespoon Red wine vinegar
• 1 tablespoon Chopped fresh parsley
• 0.5 teaspoon Smoked paprika
• 0.5 teaspoon Freshly cracked black pepper
• As required Salt to taste
• 3 cup Chopped collard greens or kale
