STEP 2.Season the duck hearts and tongues with salt and pepper.
STEP 3.Place the duck hearts and tongues in a vacuum-sealed bag.
STEP 4.Seal the bag using a vacuum sealer.
STEP 5.Place the bag in the water bath and cook for 2 hours.
STEP 6.Remove the bag from the water bath and let it cool slightly.
STEP 7.Heat a skillet over medium-high heat and add a small amount of oil.
STEP 8.Sear the duck hearts and tongues in the skillet for 1-2 minutes on each side.
STEP 9.Slice the duck hearts and tongues and serve.
