• 2 teaspoon Olive oil

• 1 cup Diced carrots
• 0.5 cup Diced celery
• 2 Garlic cloves, minced
• 28 ounce 1 can petite diced tomatoes
• Parmesan cheese rind, optional
• 1 sprig Fresh rosemary
• 2 Bay leaves
• 2 tablespoon Chopped fresh basil
• 0.25 cup Chopped fresh italian parsley
• 0.5 teaspoon Kosher salt and fresh black pepper
• 8 ounce 1 medium zucchini, diced
• 2 cup Chopped fresh, or frozen defrosted spinach
• 2 cup Cooked small pasta such as ditalini, al dente
• Extra parmesan cheese for garnish, optional
