• 1 teaspoon Olive oil
• 1 White onion, diced
• 4 Cloves garlic
• 2 Large carrots, chopped
• 2 Red pepper, diced
• 1.5 pound 99% extra lean ground turkey
• 1.5 tablespoon Chili powder
• 1 teaspoon Cumin
• 1 teaspoon Dried oregano
• 0.25 teaspoon Cinnamon
• 1 ounce Can of crushed tomatoes
• 1 ounce Can of tomato sauce
• 2.5 cup Low sodium chicken broth, plus more if necessary
• 1 ounce Can black beans, rinsed and drained
• 1 ounce Can kidney beans, rinsed and drained
• 1 cup Uncooked quinoa, rinsed
• 3 tablespoon Minced chipotle peppers in adobo sauce
• As required Salt and pepper to taste
