A delicious comforting stew of beef ribs slow cooked with vegetables and seasoned with ginger and garlic till the meat is tender and juicy in a flavourful soup.
STEP 1.Wash and trim 2 to3 lbs beef short ribs cut into manageable pieces. Pat them dry with kitchen paper towel.

STEP 1.heat a pan on medium heat and add 2 tbsp oil, add 2 to 3 lb beef short ribs in the pan, with the bone side done.

STEP 1.let the ribs searwell on one side and then turn them over. This will take a few minutes.

STEP 1.once the ribs are brown and well seared on both sides, transfer them to a slow cooker. Add water to cover the ribs (5 to 7 cups in total).

STEP 1.place the pan back on the heat and add 2 tbsp chopped garlic, 1 ½ cup chopped onions and 1 cup chopped celery. Stir fry for a few minutes till fragrant.

STEP 1.add the onions, celery ginger and garlic to the slow cooker. Add 3 large pieces of chopped ginger.

STEP 1.also add 6 roma tomatoes cut into large pieces, 2 carrots cut into big chunks, 2 tsp of dried thyme, 2 tsp of salt. Stir the ingredients together and cover.

STEP 1.turn the heat to high and cook for 2 hours. Uncover the pot and mix to bring the ribs from the bottom to the top.

STEP 1.then turn the heat to low, cover and continue to cook for another 1 ½ hour to 2 hours till the meat is ‘fall of the bone’ tender.

STEP 1.check for salt and adjust accordingly. Then add 2 tsp black pepper powder, 3 to 4 tsp brown sugar. Mix gently to dissolve.

STEP 1.once ribs are ready, spoon out the excess oil that gathers on the surface of the dish and discard it.
