• 1 Medium Onion Finely Chopped
• 2 Medium carrots grated
• 1.5 tablespoon Canola oil
• 1 pound Pork any kind; i used boneless pork sirloin chops
• 2 Large garlic cloves pressed
• 0.5 teaspoon Salt + 1/8 tsp pepper
• 1.5 tablespoon Canola oil
• 3 tablespoon Tomato sauce or 1 tbsp tomato paste
• 2 ounce Jar diced pimiento peppers drained
