Apricot-Pistachio Rolled Pork Recipe

Cooking Directions

• STEP 1.Preheat the oven to 375��F (190��C).
• STEP 2.Butterfly the pork loin by making a lengthwise cut down the center, stopping about 1/2 inch from the bottom.
• STEP 3.Open up the pork loin and flatten it with a meat mallet or rolling pin.
• STEP 4.In a bowl, mix together the dried apricots, pistachios, breadcrumbs, parsley, thyme, salt, and pepper.
• STEP 5.Spread the apricot-pistachio mixture evenly over the flattened pork loin.
• STEP 6.Roll up the pork loin tightly and secure it with kitchen twine.
• STEP 7.Place the rolled pork loin in a roasting pan and roast in the preheated oven for about 1 hour, or until the internal temperature reaches 145��F (63��C).
• STEP 8.Remove the pork loin from the oven and let it rest for 10 minutes before slicing.
• STEP 9.Serve the sliced pork loin with the pan juices.

• Store any leftover rolled pork loin in an airtight container in the refrigerator.
• Reheat the pork loin in the oven or microwave before serving.
