Aji is a Peruvian green sauce, made with cilantro jalapenos and a little mayonnaise and Paremsan. This is a hot, spicy salsa typically served with empanadas and other foods as a condiment. It has more liquid than, say, a Mexican salsa. A chilli pepper that ranges in pungency and is very hot but produced in several various cultivated varities of wild South American capsicum.
