The European summers are pleasant with average temperatures ranging anywhere from 17 degrees to 23 degrees in the month of June. With a soft cold breeze flowing and the sun shining, these days give an excellent  opportunity to plan out-door picnics. Soha Ali Khan and Kunal Kemmu, who had been vacationing in the United Kingdom with their daughter Inaaya Naumi Kemmu recently, took advantage of one such day and ventured out on a family picnic. Soha shared a loved up photo of hers with her daughter in which the duo was seen chilling in a park in London with sandwiches and beverages spread between them. Inaaya was enjoying a bacon lettuce tomato sandwich while Soha was soaking the sun. 

Soha and Kunal have been sharing many photos of their culinary escapades from their vacation in the UK. The duo also enjoyed ice-cream with their daughter on a lazy sunny afternoon in London recently. In a photo shared by Kunal on his social media, were Kunal, Soha Ali Khan and Inaaya Kemmu, sitting on a bench and sharing a single scoop of vanilla ice cream that Inaaya was holding on to. These needn’t be limited to just picnic baskets, but can also be a part of  your child’s lunch box. Here are a few snack ideas for your next picnic or for the next time you try to make an interesting meal for your kids: 

Mediterranean pasta : This pasta can be prepared in a jiffy. It is a no spice recipe and involves the use of fresh tomatoes and herbs. If you so please, you can toss in chunks of sautéed shredded chicken in the pasta to give it a protein boost. Feta cheese which is an important ingredient in this pasta is also a great source of calcium for your kids.

Ingredients: 

  1. Pasta 
  2. Extra virgin olive oil
  3. Garlic
  4. Cherry Tomatoes
  5. Red chili flakes
  6. Oregano
  7. Parsley
  8. Feta cheese

Method: 

  1. Boil the pasta. Chop the vegetables.
  2. Heat olive oil over medium heat. Add in garlic and red chili flakes and sauté for awhile. 
  3. Next, add in the cherry tomatoes. Add the pasta along the parsley. Give it all a quick stir, and finally garnish with feta cheese

Bacon cheese tomato sandwich: This is the sandwich which Soha’s daughter Inaaya was having at their family picnic. This recipe is delicious and will surely become a family favourite. You could substitute bacon for shredded and sautéed chicken, if you so please. Feel free to add any herbs as seasoning if you want to give this sandwich a seasoning twist. For making it a complete meal, serve this sandwich with some orange juice and chips of your choice.

 Ingredients: 

  1. 8 slices of bacon (you can substitute this with stir fried shredded chicken) 
  2. ⅓ cup plain Greek yogurt 
  3. 1 small clove garlic, minced 
  4. Salt 
  5. 2 tomatoes, sliced 
  6. 1 avocado, sliced 
  7. Lettuce leaves 
  8. 8 slices white sandwich bread, toasted

Method: 

  1. Cook the bacon in a large skillet over medium heat until crisp. 
  2. Mix the yoghurt, garlic, and ¼ teaspoon salt in a small bowl.
  3. Divide the bacon, garlic mayonnaise, tomatoes, avocado, and lettuce leaves in between the bread and enjoy! 

Chicken kathi roll: Who doesn’t love a sumptuous chicken kathi roll? Nutritious and filling, you can make this roll if you want to carry a no fuss single item picnic basket. As the chapathi in this roll is loaded with carbs, this little bite will keep your kid full for a long time. The chicken kathi roll can be served along with mint or coriander chutney and a glass of your child’s favourite cold drink. Try this recipe of chicken kathi roll out, by Chef Sanjeev Kapoor:

 Ingredients: 

  1. Refined Flour 
  2. Boneless Chicken 250 grams 
  3. Ginger 1/2 inch piece 
  4. Garlic 3 cloves 
  5. Green chillies chopped 4 
  6. Salt to taste 
  7. Cumin powder 1 teaspoon 
  8. Chaat masala 1/2 teaspoon 
  9. Onions sliced 2 medium 
  10. Carrot cut into thick strips 1 medium 
  11. Oil 2 tablespoons 
  12. Green chutney 4 tablespoons 
  13. Fresh coriander leaves chopped 2 tablespoons 

Method: 

  1. Grind together ginger, garlic and two of the green chillies into a paste. Marinate chicken cubes in ginger-garlic-green chilli paste and salt for an hour.
  2. Heat oil in a pan and sauté chicken cubes till done. Add cumin powder, chaat masala and check seasoning. Mix sliced onions and carrot strips.
  3. To make kathi rolls, put one teaspoon of oil on a tawa and lightly heat the rotis. Smear each roti with one tablespoon of green chutney, place six to eight pieces of cooked chicken and sprinkle with remaining green chillies and coriander leaves. Spread a spoonful of onion and carrot mixture on the roti and sprinkle salt.
  4. Roll the roti tightly over the stuffing and serve.
