This muffin is easily customizable, so if these aren’t your preferred veggies, you can always swap them out for others. And in thirty minutes, you can have the perfect snack/breakfast. This recipe makes 10 muffins. These muffins store well: refrigerate for 3 days or freeze for 1 month.

Herb & Potato Scones

These are also called tattie scones in their native language across the UK. The term "tattie" means "potato" in English; these may also be referred to as potato scones. These are a form of gridle scone prepared with potatoes (known as tatties) and are typically eaten with sausages, bacon, eggs, black pudding and tomatoes as part of a cooked breakfast. For the best tattie scones, use a floury potato; waxy potatoes are not suitable for this recipe. You may, of course, use leftover mashed potatoes; just be sure to adjust the seasoning if you've previously seasoned them. You may move the dough in a circle to your frying pan and cut into triangles after cooking, but it is much quicker to cut the triangles before frying. One advantage is that it facilitates the transfer to the pan. Second, it results in wonderful crisp edges as they cook.
