1. Tomato Soup

Cold tomato soup or Gazpacho comprises of chopped vegetables, tomato juice, garlic, olive oil, and mix of spices all blended together to make this creamy, colourful soup that is to be had, chilled. 

2. Green Peas and Mint Soup

Everyone is aware of the cooling properties of mint leaves and paired with delicious green peas, salt and pepper, olive oil and yoghurt make for a lovely green bowl of goodness. 

3. Cucumber Soup 

Cucumbers are mostly water so the dish is ultra-hydrating and quite frankly, the easiest to make among the lot. Cucumbers with their skin on are blended with mint, yoghurt and spices to make for this delicious and refreshing soup. 

4. Watermelon Soup

The red flesh of the watermelon is scooped out and pureed. Then it is simmered with chilli flakes, minced ginger and garlic, and mint leaves before chilling and serving cold. 

5. Avocado Spinach Soup 

Spinach is parboiled and then blended with an avocado, minced ginger-garlic, a few green chillies and heavy cream. The avocado and the heavy cream add to the thickness of the dish and the nutritious and fibre-rich spinach helps keep our bodies cool during the summer.
