When my NRI cousin tried describing Rabri as a sweet, white sauce, I nearly fell off the chair laughing. But it is not a very shoddy description, come to think of it. We do love to drizzle a bit of Rabri on our desserts like jalebi, kulfi, malpuas and more to accentuate its flavour and texture. However, in my view, Rabri is so much more than that. Cooked in a large kadhai, Rabri is reduced hot milk that is often mixed with copious amounts of sugar, caradmom and nuts. The sedulous stirring gives it a lovely creamy consistency. It can be consumed as is or combined with other desserts. A similar concoction of Basundi is also very popular in parts of Gujarat and Maharashtra, but the two differ in terms of consistency. Here are few of our favourite Rabri recipes. Hope you'll like them.

Lachha Rabdi
Classic North Indian Rabri, made the authentic way. Laccha is another name for malai or skin that is formed on milk when it is boiled. Expect indulgence overload.

Apple Rabdi
For an apple a day keeps sweet cravings at bay, we suppose?

Pear Rabri
Another fruity rabri with a tarty twist. Grated pears add edge to this laced dessert leaving you craving for more

Mango rabri kulfi
Why settle for Mango rabri when you can take it up a notch by moulding it as a Kulfi? Dear mangoes, we admit, we are obsessed!

Baked rabri cake
Your cheesecake got a desi upgrade. The lovely dessert packs a base made with oreo biscuits, the cake batter is made with lip-smacking rabri.
