In a moment that had the food industry taking a collective gasp, René Redzepi, the chef and co-founder of Noma - the Copenhagen restaurant widely regarded as one of the most influential in the world - has announced his resignation following a series of allegations detailing physical and psychological abuse of staff during his tenure. In a video posted to the official Noma page, he speaks about his intention to step down so his employees feel ‘100% safe’ and that the running of the restaurant would sit with his staff. In the caption of the post he adds, ‘After more than two decades of building and leading this restaurant, I’ve decided to step away and allow our extraordinary leaders to now guide the restaurant into its next chapter. I have also resigned from the board of MAD, the nonprofit organization I founded in 2011.’
The resignation came on 12 March 2026, after a New York Times report published on 7 March detailed alleged misconduct spanning from 2009 to 2017. The report drew on accounts from 35 former members of staff, who described an environment of public humiliation, verbal abuse, and physical violence. Allegations included claims that Redzepi struck employees in the face, jabbed them with kitchen implements, and shoved and punched staff members, sometimes in front of large groups of colleagues. One former employee described being punched after being seen using a phone during service, causing her to fall against a metal counter.
The Noma Legacy
Noma was founded in Copenhagen in 2003 by Redzepi and Claus Meyer. It became internationally celebrated for its New Nordic cuisine - centred on foraged and locally sourced ingredients - and was named the world's best restaurant five times by the World's 50 Best Restaurants list. The restaurant held three Michelin stars before ceasing regular service in 2024, transitioning into what it described as a food innovation laboratory.
Redzepi was awarded a knighthood by the Queen of Denmark and, in 2013, was described by the late chef and broadcaster Anthony Bourdain as "without a doubt, the most influential, provocative, and important chef in the world."
The Timeline Of Redzipi’s Conflicts
The allegations, while news to most of the world were not entirely unprecedented. In a 2015 essay, Redzepi himself wrote that he had "been a bully for a large part" of his career, acknowledging that he had yelled at and pushed staff. Although he also speculates in the essay, “I watched chefs—mine and others—use bullying and humiliation to wring results out of their cooks. I would think to myself: Why is that necessary? I’ll never be like that.”
In a 2022 interview, he stated that he had never struck anyone. Noma as a brand, acknowledged the renewed scrutiny in a statement, noting the restaurant had made meaningful changes to its workplace culture in recent years, including introducing a fully paid internship programme, improved working hours, expanded benefits, and a dedicated HR team.
The Future Of Noma
The timing of Redzepi's resignation was notable in more ways than one. It coincided with the opening of a new Noma pop-up residency at the Paramour Estate in Los Angeles, a 16-week event featuring a tasting menu priced at $1,500 per person, for which reservations reportedly sold out within three minutes. Protests were held outside the venue by the wage advocacy group One Fair Wage, led by Jason Ignacio White, a former head of Noma's fermentation lab who had been collating abuse allegations on his social media platforms. Several sponsors also withdrew their funding from the project following the reports.
Despite Redzepi's departure, Noma will continue to operate. In his statement, the chef expressed confidence in the team he was leaving behind. "We’ve been open for 23 years, and I’m incredibly proud of our people, our creativity, and the direction Noma is heading." he wrote, adding that he hoped the LA residency would serve as a demonstration of what the team had been working towards.
After 23 years, countless accolades and innumerable meals served across the world, Redzipi’s departure from the Noma brand has thrown a lot of its future success into question, and the food world will be watching whether this prestigious establishment will bounce back from this event or push on with their mission of excellence.
