The Legacy Of The Peking Duck, Four Seasons Hotel Bengaluru

Four Seasons Hotel Bengaluru is hosting ‘The Legacy of the Peking Duck’, a unique dining experience at Far & East that explores six centuries of imperial culinary legacy through the perspective of contemporary cuisine. The display, directed by famed Chinese Chef Wong Chin Sheong, resurrects methods developed in the Ming Dynasty's guarded kitchens and honed over centuries of Cantonese skill. At its heart is The Master's Carve, a tableside rite in which Chef Wong reveals the prized “Lacquered Gold” finish, an amber-glazed skin of exceptional translucence and exquisite crispness created by centuries-old roasting procedures. The Beijing-style Peking Duck comes with homemade pancakes and a trademark plum sauce, whilst the Cantonese version includes black truffle and garlic for aromatic depth. The Sichuan Aromatic Crispy Sesame Duck is a study in texture, with toasted sesame and creamy hoisin, while artisanal accompaniments round out the entire culinary journey. Hand-pleated Duck Potstickers pay homage to northern Chinese culture, and the Peking Duck Sushi Roll combines Eastern and Japanese influences, along with Wok-kissed Golden Glass Noodles and Truffle Duck Fried Rice with Wild Mushrooms round out this voyage of legacy and innovation.
