Hyderabad
TheySee, Jubilee Hills
Every feature, from the colour scheme and stone textures to the artwork and landscaping, has been meticulously planned in this space. There are subtle details influenced by Raja Ravi Varma's paintings, with a modern twist, such as a statue of a lady clutching a guitar. At the entryway, matchbox-style installations serve as photo opportunities, nearly inviting you to stop and take a picture. The bar leans experimental, with gongura dust and white chocolate appearing in drinks. You get to taste Nazar Na Lagey, a sweet, crisp combination of pineapple, coconut, and basil, followed by Brew Code, a coffee-forward drink made with vodka and orange cold brew that felt both balanced and familiar. The food, like the environment, challenges memory and identity. Ingredient-forward and authentically Indian, viewed via a modern lens—their tagline says it all: desi cheezein, videsi nazariye se (Indian goods, foreign viewpoints). The restaurant has a dish called Bugs Bunny as a vegetarian starter made with carrots dusted with tandoori masala, playful and unexpected, while Oh So Corny follows on the menu. What sounds like a riff on loose corn turns into a chaat-style dish, a clever take on a cornflakes mixture, layered with textures, where corn appears in more ways than one. Among the non-vegetarian starters, Anda Currypatta earns its place — a Hyderabadi khagina rebuilt as dumplings, the tomato and curry leaf base doing quiet, confident work. Pankh Rock is the table's showoff: wings loaded with minced meat, rich and unrestrained. The Not So Chilli Cheese Toast is a light-hearted tribute to Hyderabad, mediated through chef Suryansh Singh Kanwar's interpretation of shahi tukda. It combines white chocolate rabdi with bread soaked in a tres leches-style sauce and finished with nutty brunoise cheese. What starts as a bar snack ends up as dessert; think of it as a more decadent, textured cousin to sandesh.
