Breakfast is one of the most important meals of the day. We have heard this many times from experts and doctors, but more often than not we tend to forget it quickly. Amid the work and hustle-bustle of the early morning rush, we tend to skip our morning meal often or simply grab the quickest thing possible - which is often a fruit or simple bread and butter. Some even survive on just coffee. But skipping breakfast or eating less in the morning will not only make you feel fatigued through the day, but also lead to untimely cravings and overeating during other meals.  

But fret not, we’ve got you covered with a quick and easy breakfast recipe that can come to your rescue during rushed hours. Sweet corn pancakes are not just delicious, quick and easy but also wholesome. Corn is one of those cereals that is very low on calories and fat, but has good amounts of Vitamin C, iron, Vitamin B12 and folic acid. It is known to aid weight loss. So, what better than these corn pancakes to rev up your weight loss journey right in the morning?

This quick and easy corn pancake recipe - by Slurrp Community member @tadka_mar_ke - is a balance of taste and health. You simply need to blend the boiled corn kernels, and add rava, gram flour, turmeric, and chilli flakes to it. Mix well, and add veggies of your choice, some sweet corn, onion, and coriander, along with fruit salt and water. Mix it well to make a batter, and pan-fry in hot oil. You can serve it with tomato ketchup for a wholesome, fulfilling breakfast. Take a look at the full video here:

 

Ingredients:

1 cup boiled sweet corn 

¼ cup rava 

2 tbsps gram flour 

A pinch of fruit salt 

Water 

¼ tsp turmeric 

½ tsp chilli flakes 

Salt, as per taste 

Vegetables of your choice 

Coriander 

Oil

Method: 

. Blend boiled sweet corn to a smooth paste. 

. Take a bowl and add the blended sweet corn, followed by a mix of rava and gram flour and turmeric with chilli flakes, salt, and a little water. 

. Let it rest for 10 minutes. 

. Now add coriander, fruit salt, onion, capsicum and more water to the bowl, and mix well. You can add veggies of your choice. 

. Now, grease the pan with oil and spread the mix on it to cook until crisp and golden brown. 

. Serve hot with tomato ketchup.
