Valentine's Day is when people express their love through greetings, gifts, and savoury and sweet delicacies. Cooking for your romantic partner on special occasions has a different charm. It is a proven method to win hearts. Resonating with Tenzin Losel, Corporate Chef, Mosaic Hotels, has created a healthy and simple dish to prepare at home. "One of my most recent recipes is a ragi idli sandwich. Ragi is a rich source of healthy carbohydrates and protein. It is gluten-free and suitable for those who are gluten intolerant. Thus, it is ideal for health freaks," shares Chef Tenzin and agrees that Valentine's Day is celebrated as the day of love, a season of expressing love and pampering loved ones. "With the ragi idli sandwich, I wanted to offer a healthy and equally tasty recipe to people which can be made easily at home for their loved ones." 

But ragi idli as a sandwich, isn't that a unique combination? It is indeed inimitable; saying so, Chef Losel explains, "Everyone enjoys sandwiches. The same goes for ragi idli, especially in recent times ragi or finger millet is basking in the limelight. So, why not give a healthy twist to Valentine's Day breakfast or snack idea with a ragi idli sandwich?" Quite a convincing logic. He also informs that the recipe is pretty easy and can be prepared in a jiffy. 

Ragi Idli Sandwich

Ingredients

  • 30 gm idli rice      
  • 5gm methi seed     
  • 30 gm ragi flour     
  • 5 black salt   
  • 30 gm tomato      
  • 2 cheese slice 
  • garnish            
  • 5 gm tomato sauce  
  • 5 ml olive oil  
  • 5gm tomato salsa   
  • 2 black olives stick
  • 5 gm fried glass noodles    
  • 1 green chilli
  • 5gm fresh coriander  

 Method

  • Wash and soak rice and dal in water separately for 4 to 6 hours. Once both are soaked, grind them separately by adding little water to a smooth paste. Add in ragi flour to paste and mix well. Cover and let it ferment overnight.
  • The following day, the batter would be risen and fold it well. Add baking soda and mix well.
  • Grease idli moulds nicely and pour a ladleful of batter into each mould. Once all are filled, place the mould stand in a steamer. Let them steam for 8 to 10 mins till it is done. 
  • Remove it and let it cool.
  • To prepare the sandwich, combine stuffing coleslaw with lettuce, cheese, tomato slices, and Amul cheese and top with tomato salsa. Garnish with fried glass noodles and put a sautéed stick in the centre of a sandwich. 
  • Serve with tomato sauce.
