In recent years, an extensive focus has been on a healthy relationship between an eater and food. Unless there is a balance and respect for the latter, the consumer can never be in harmony. Isn’t that applicable to any relationship? And several chefs are trying to highlight that aspect of food and the consumer. Chef Honey Mishra, Green Mantis’ consulting chef, has been extensively trained in classical French and European cuisine. At the same time, his birth and growing roots in Lucknow, his culinary knowledge started and has its base in Awadhi cuisine. “Food is a lot like the emotion ‘love’; the more you explore it, the more you get into the depths of it. One develops the prowess to decode the chemistry between different food ingredients.”

He nudges people to have such an equation with food. That is how one can enjoy creating unique dishes using seasonal and regional produce that blend unexpected flavour combinations, just like he does. He is experienced in meeting special dietary needs and requests, including gluten-free, vegetarian, vegan, low-calorie, low-carb and dairy-free meals. Chef Mishra successfully conceptualised and developed innovative menus.
