Goa—what do you recall when you hear the name of the place? Beaches, good beer, and great food. The sheer variety of Goan food is too much for tourists to even try half of what Goan cuisine has to offer. So, most stick to coastal cuisine and the very famous Ros Omelette.
Ros omelette is a delightful and popular dish that beautifully blends the flavours of a traditional Goan curry, known as ros, with a classic omelette. This unique combination creates a mouthwatering fusion of textures and tastes that is comforting and satisfying.
The preparation of ros omelette begins with whisking eggs until light and fluffy, seasoned with salt and pepper. The omelette is then cooked to perfection, resulting in a soft, golden-brown exterior and a tender centre. The star of the dish, ros, is a curry typically made with tomatoes, onions, garlic, and other spices of choice like cumin, coriander, and red chilli powder. This rich and savoury gravy is generously ladled over the omelette, infusing it with a burst of spice and creamy goodness.
Since this has become such a signature dish and many people have it on their bucket list to try the ros omelette from Goa, we asked some city foodies for their recommendations on the best places to have it in Goa. So, here is a list of places for you to try, according to our seasoned foodies.
Sirsat Restaurant
Suggested by
@goanstory
Run by three IT engineers, Goan Food Stories administrators Abhishek Naik, Akshit Kanolkar, and Hrishikesh Shirsat suggested Sirsat in Assagao. "This is the legendary Sirsat No. 1 in Assagao, known for its Goan street food dishes, and their ros omelette is a favourite among locals. The combination of a well-made omelette and the tangy Ross curry makes it a delightful choice."
Other than the ros omelette, the trio recommended other dishes too. They say, "It is one of the best places to have cutlets, fried rice, chicken dry fry, chilli, and cafreal at reasonable rates. It is open until late at night, and the service is quick. Do try their Chicken Omelette and Cafreal too!"

Chosen as the favourite spot by an overwhelming number of foodies on our list, Gopal Ros Omelette rules the chart. The place is very famous for a variety of reasons, and Nolan adds one: "The mutton curry is a signature of the Hindu Goan preparation with the spicy chillies used from Canancona. The ground masala is also a signature of his style, served with mutton curry and mutton soup in a glass. While many around make the chicken option feely available, finding good, soft, succulent mutton served with a spicy gravy is just what the doctor ordered, with hot pao, especially on rainy days." Abhinay Naik shares the same opinion about mutton gravy.
Akshaya best explains the place in a sentence: "A small Kiosk but an extremely huge name for the South Goans."

Another place that is popular with the locals, Omkar makes great ros omelette and is definitely value for money. Nolan says, “His portion sizes and variations are the talk of the town. Always innovative and he serves a hearty meal of a fried piece of chicken with 2 paos and ros for 50 rupees! The fried chicken is what I would like to call an innovation given the addition of an interesting different dimension to the quintessential format of the same dish.”

Another absolute fan favourite, this tall building has made a name for itself amongst locals and tourists alike. Talking about the legacy of the place, Aditi says, "This guy needs no introduction now; if you ask for a Ros Omelette recommendation from anyone in Goa, his name is bound to surface. So, no mysteries there; he is popular because he makes exceptionally great Ros Omelette, and this place holds a lot of emotional value for people. It’s much more than just serving a great dish."
For Riya, this is a go-to place because "It satisfies those midnight ross omelette cravings. It is one of the very few places in Panjim that are open until midnight."

Located in South Goa, the place is extremely popular among locals. Calling it a must-visit place, Riya says, "At Ulhas Ros Omelette, there are two xacutis: one is the Chicken and the other is the Mutton. And both are delicious." Ulhas Gaddo should definitely be on your itinerary if you plan on trying the iconic dish. Anand Raikar mentions that the place is a dose of nostalgia for him :"I remember waiting in line even as a college student when I visited this place located adjacent to the Bank of Baroda in Margao. They have a spicy version of gravy — if you have a cold, you should visit this place. In addition to chicken xacuti and mutton gravy with pav, they also offer chicken soup. I always make sure to take a little extra gravy for my leftover bread, which he never charges me for."

This place is what you would call an iconic shop! Akshaya mentions, "It’s located at one of the best locations in Mapusa and is one of the oldest food outlets here. For more than 50 years, they've been serving the people of Goa. May it be the chicken xacuti, ross omelette, or boiled eggs. It’s undoubtedly one of the most crowded places for ross omelette in North Goa." Why is the place still relevant and popular after all these years? Riya answers, "This place has been my favourite for decades. Their masalas are amazing, giving you a very homely feel."

As much as the food is important, the ambience too makes a whole lot of difference in our experience. Andrea shares a similar opinion and states, "I love eating my food with a relaxing and calm ambiance, and Avo’s Kitchen features perfectly tranquil interiors with beautiful greenery all around, making it the perfect spot to devour their delicious Ross Omelette that not only looks good on the plate but tastes divine, all created from authentic Goan recipes and local ingredients. It’s like having the warmth of "local taste" with a serene dining experience in Goa."

This small restaurant is making waves in Goa, as Aditi says, "Do try the ros omelette at Bombil, a cosy restaurant that serves authentic Goan cuisine. Although they are extremely popular for their fish thali, mutton thali, and some of the other dishes, for me personally, their ros omelette has my heart. It's surely one of the dishes that I can go back to again and again. The attention to detail, the commitment to authentic flavours, and the warm hospitality they offer have left an indelible mark on my palate." Indeed, a place with amazing hospitality and ambience deserves all the hype it gets.

It’s spicy and delicious. When in North Goa, Cafe Sai Anant (Shivram’s Gaado is a must try)."
