Here are some desi egg recipes that you can try for breakfast this week. 

1.  Egg Bhurji Sandwich 

This is one of the easiest and simplest Indian recipes. A desi version of scrambled eggs, the anda or egg is broken into a pan with some sautéed onions. Chopped tomatoes and coriander leaves are added to it and all of this is scrambled together. Sprinkle salt and red chilli powder and mix it all together. Spread it on a slice of bread and top it with another one. Grill or toss it on a pan. 

2.  Masala Omlette 

Another classic recipe that works well for breakfast is this masala omlette. The egg is broken into a bowl and tossed with onions, tomates and coriander leaves. Add some turmeric, chilli powder and salt to taste. Whisk it all together and pour it on a pan. Spread it with a spatula so that it gets a round shape. Flip it and cook from both sides. Fold it into half and serve with toast. 

3.  Egg Paratha 

Prepare the dough a night before and store it in the refrigerator. Next morning, all you have to do is roll out a paratha and toss it on a pan. Once cooked, pour in the omlette mixture on one side. Let it cook and flip it. Wrap it into half and serve with tomato ketchup. 

4.  Masala French Toast 

Crispy toasties cannot be denied in the morning, especially with a desi touch. Ditch the regular french toast for this yummy masala-packed egg toast made in Indian homes. This has chopped onions, coriander, tomatoes, green chillies and all that you like. 

5.  Parsi Eggs 

Do you like Parsi food? If not, this egg recipe will make you fall in love with it. Known as Akuri, the Parsis love to have scrambled eggs in the morning. Onion and tomatoes are added to the eggs and it is spruced up with ginger, turmeric and garam masala. A little gravy-like texture, these eggs works super well for breakfast.
