The Humble Potato Blended Into A 3-Course Meal

Potatoes are omnipresent in our meals. We have them as parathas, fries, sabzi and as dessert. The range and versatility of potatoes is unmatched. We can pair them up with any other vegetable and run with it. Aloo matar, aloo tamatar, aloo palak, aloo paneer or aloo in Biryani – it just fits well everywhere. And while we are so used to eating potatoes, they are not really seen as the star ingredient or used to cook the main dish if we host a feast. Why is that? Have potatoes become so regular that we can no longer associate them with parties, dinners or festive food? Well, we are here to change that for you. Here is how you prepare a lavish 3 course Indian meal with potatoes as the main ingredient!

Starter

Aloo Tikki – What can be a better snack than aloo tikki to kick start a party? This Indian finger food is easy to make and can be modified according to taste. A simple tikki can be turned into a chaat in no time – just add some chickpeas, curd and sev on top of it!

Ingredients

  • 2 boiled potatoes
  • ½ cup rice flour
  • 2 tbsp besan
  • 1 finely chopped onion
  • 3-4 chopped green chillies
  • 1 tbsp powdered red chilli
  • 1 tbsp black pepper
  • 1 tbsp chaat masala
  • ½ cup refined oil
  • Salt as per taste

Method

  • Put the boiled potatoes in a large mixing bowl.
  • Add rice flour and besan to the potatoes and mash them together.
  • Now add all the powdered spices.
  • Add onions and chilli and mix everything till you have a solid mixture.
  • Now divide the mixture into little pieces and make circular tikkis with your hands.
  • Heat up the oil in a shallow pan and put your tikkis in it one by one.
  • Cook them till both sides are golden in colour.
  • Your tikkis are ready! Serve them with dhaniya chutney or use the tikkis to make chaat.
