Ridge Gourd Sabzi: Yummy Twist To This Nutrient-Rich Vegetable

Ridge gourd, or torai, is not a favourite among many, but we also cannot ignore the numerous health advantages this vegetable offers. Thus, we end up searching for different ways to prepare a delectable torai dish that will have your family licking their fingers and devouring every last bit of it. 

Fret not. We have a Ridge Gourd Sabzi for you that goes well with chapatis and pooris. Make the most of the ridge gourd that is readily available during winters. This dish is high in fibre. This vegetable has a hard exterior but a tender interior. Since the emergence of the Ayurveda, ridge gourd has been regarded as a crucial ingredient. It is believed to have been a component of diets that balanced the three doshas, or biological energies, present in every cell of the human body and mind. The ridge gourd is rich in antioxidants, Vitamin C, riboflavin, zinc, and other nutrients.

Here’s the recipe for Ridge Gourd Sabzi.

Ingredients:

  • 2 medium-sized ridge gourd 
  • ¼ cup peanuts 
  • 2 tbsp white sesame seeds
  • ¼ cup dry coconut
  • 1 tbsp oil 
  • ½ tsp mustard seeds 
  • ½ tsp cumin seeds
  • A few curry leaves
  • 1 cup onion (chopped)
  • 1 cup tomato (chopped)
  • Marble-sized tamarind
  • 1 tsp jaggery
  • 1½ tsp salt

Method:

  1. Take ¼ cup of peanuts in a pan and roast while constantly stirring them. 
  2. When the process is half done, add 2 tbsps of sesame seeds to it. 
  3. Continue roasting on medium flame.
  4. Now, add ¼ cup of grated dry coconut to it and saute for a few more seconds. 
  5. Switch off the gas flame and let the mixture cool down.
  6. Transfer the mixture to a mixer and make a fine powder of it.
  7. Now take 1 tbsp of oil to a pan. 
  8. Take the finely washed, peeled and cut cubes of ridge gourd, and add to the pan. Saute for a few minutes.
  9. When the veggie starts turning soft, remove the pan from the stove and keep it aside.
  10. Now, put 1½ tbsp of oil into a pan. Add mustard seeds, cumin seeds and a few curry leaves. Let it splutter.
  11. Add finely chopped 1 cup of onion to it. Saute till it becomes translucent.
  12. Now add finely chopped one cup of tomato and saute for 5 more minutes. 
  13. Add 1 tablespoon of salt and saute for a few more seconds.
  14. Cover the pan with a lid and cook until the tomato turns mushy.
  15. Now, add ¼ tbsp of turmeric powder, 1 tbsp of red chilli powder and ½ tbsp of coriander powder to it. Mix them well.
  16. Add ¼ cup of water and cook for 5 more minutes.
  17. Now, add the powdered peanuts and sesame mixture to it. Mix them well. 
  18. Add ½ cups of water and stir together.
  19. Take the marble-sized soaked tamarind and crush it in the soaked water gently. Now, add the water to the pan. 
  20. Take 1 tbsp of jaggery powder and ½ tbsp of salt to it. 
  21. Mix well and continue cooking. 
  22. Now, add the sauted ridge gourd pieces to the mixture and give a nice mix.
  23. Cook until the vegetable gets softened at a low flame.
