Every state has its popular dish, and today we will tell you about the famous delicacy of Rajasthan. Laal maas is a popular dish reflecting the Rajputana pride in the exquisite cuisine and cooking methods of Rajasthan. This is a mutton curry that non-veg eaters eat with great fervour. Mutton is rich in vitamin-B1, B2, vitamin-E, vitamin-K, protein, natural fat, amino acids, calcium, iron, zinc and many nutrients. Though it takes some effort to make, you will never forget its taste once you eat it. This dish is exceptional for those who like spicy food. You can easily make Rajasthani Laal Maas by tempering green and red chillies as this curry's flavour comes from its aromatic spices.

Rajasthani Laal Maas Recipe By Chef Amit Kumar Singh

  • Cooking time: 1 hour 10 minutes
  • Total time: 1 hour 25 minutes
  • Serving: 3 people

Ingredients:

  1. Onion 4 medium size
  2. Mathania chilli 6 no
  3. Mustard oil 1/2 cup
  4. Goat meat 500gm
  5. Garlic clove 12 no
  6. Red chilli 6 no
  7. Curd 1/2 cup
  8. Salt to taste

Method:

  1. For half an hour, soak the red chillies in hot water.
  2. Slice the onions.
  3. In a wok, heat the mustard oil.
  4. Once the oil starts smoking, add the onions and fry until golden brown. Separate and keep aside.
  5. Peel the garlic.
  6. In a mixer, make a garlic paste and red chilli.
  7. Add the meat chunks in the same wok where fried onions are.
  8. Keep the heat on a medium flame and fry the meat for 15 minutes.
  9. Add the red chilli paste along with fried onions and curd.
  10. Stir briskly to avoid the curd from curdling.
  11. Cook on a medium flame and cover.
  12. Add salt and some water.
  13. Uncover and cook till the gravy reaches a semi-solid consistency.
  14. Cover and cook until the meat is tender.
  15. Serve with roti and rice.
