It is believed that non-vegetarians have a variety of options which help them in their weight loss journey, but this myth clearly gets broken with this recipe. This paneer stuffed capsicum recipe is high in protein, low in calories and low carbohydrates. The calorie content of this recipe is 327 grams, protein content is approximately 20 grams and carbohydrates around 8 grams. This dish could be taken for dinner. This recipe could be easily added to the keto diet. 

Health Benefits of Capsicum

Capsicum improves metabolism and therefore helps in weight loss. It also helps in digestion and is a rich source of folate and Vitamin B6 which lowers homocysteine levels, thereby lowering the risk of heart disease. It also contains antioxidants that protect the body against free radicals. A raw capsicum contains 94% water, 5% carbohydrates, 1% protein and almost zero amount of fat and hence acts as a good weight loss food. A red bell pepper contains twice the Vitamin C and eight times the Vitamin A as green capsicum. Bell Peppers are a rich source of Vitamin C, thus helping in immunity building. They have good amounts of Vitamin A, B6, Vitamin E and other necessary nutrients such as folate, riboflavin, etc. They are used as salads or as pizza toppings. Capsicum lowers the risk of cancer as it contains anti-inflammatory nutrients and antioxidants. The carotenoid lycopene present in the bell pepper is also effective in lowering the risk of cervix, prostate, pancreas and bladder cancer. 

Ingredients:

  • 150 grams Capsicum
  • 100 grams Onion
  • 200 grams Paneer
  • 5 grams Garlic
  • 2 Green Chillies
  • 2-3 tsp Oil
  • 1 tsp Mint and Coriander Chutney
  • 1/8 tsp Turmeric
  • 1/4 tsp Red Chilli Powder
  • Fresh Coriander Leaves
  • Salt for taste

Method:

  • Cut the top part of the capsicum and deseed it to create a hollow space in between
  • Chop the onions, garlic and chillies into fine small pieces
  • Now grate the paneer finely
  • Heat one teaspoon of oil in a pan and add chopped onions, garlic and chillies; cook for about five minutes till turned translucent
  • Now add paneer, to it add turmeric and red chilli powder along with salt; mix it well
  • Cook the mixture for around 2-3 minutes
  • The paneer stuffing is ready
  • Now fill the stuffing inside the capsicum and cut the capsicum into 3-4 small cylindrical shapes
  • Now heat oil in a pan again and put the stuffed capsicum to be cooked
  • Cover the pan and cook for half a minute
  • Flip the sides and let it get crisp for another half minute

This stuffed capsicum recipe is super healthy, delicious and could be consumed for dinner.
