Actress Neha Sharma who made her Hindi film debut with the movie ‘Crook’ opposite Emraan Hashmi was last seen in Tanhaji, a period drama that also starred Ajay Devgn and Saif Ali Khan in the lead. Her appearance in music video of ‘Dheeme Dheeme’ opposite singer and composer Tony Kakkar was also appreciated by fans. The actress has a string of interesting projects lined up ahead of her, including a couple of web series. The actress has quite a fan following on social media too. With more than 14.2 million followers on Instagram, she is indeed one of the stars to reckon with on the photo-sharing app. In addition to her stunning OOTD’s and fun BTS, the actress also often gives us a sneak peek into her plate. She is a self-confessed foodie, and on the occasion of Eid, she was at actor Jibraan Khan’s residence, where she relished “the yummiest home cooked Eid delights”. The actress posted the videos on her Instagram stories on Tuesday, and guess her stunning videos have triggered our cravings again for some yummy sevaiyan. In the video, we see a tray full of yummy mutton biryani, some fried sevaiyan and a nutty milk pudding that she adds on top of the sevaiyyan before chomping on it.  

Sevaiyan or vermicelli are thin-noodle like strands that are used widely in middle-eastern cuisine, across sweet and savoury preparations. Did you know Eid-Ul-Fitr is also known as ‘Meethi Eid’ because of a certain delicacy that is almost always prepared on this day. It is called Sheer Khurma. Sheer is the Persian word for milk and Khurma means dates, this milk pudding is sweetened with dates, and often uses boiled vermicelli too. Chunky nuts and fragrant saffron and cardamom makes the dish all the more tempting. Other delish Sevaiyan preparation that you associate with Eid is the Qimami Sevaiyan, it is not as milky as sheer khurma, here the vermicelli is prepared with lots of nuts, sugar, kewra water etc, you can even call it sweet and nutty noodles, because there’s barely any presence of milk here.

Here are some tips to keep in mind to make excellent sheer khurma

  1. Always pick fine vermicelli, as opposed to the regular ones that are slightly thicker.
  2. Use full fat or whole milk for the dessert, skimmed milk wouldn’t do that justice.
  3. When it comes to dates, it is best to use the pitted ones, or you’d have to spend most time removing the seeds.  
  4. You cannot expect a rich dessert without ghee, so do not be stingy with it.  
  5. Try and use granulated sugar, it helps quicken the process and enhance the flavour too.  
  6. To add more texture to your desserts, add more nuts and dried fruits, they add a lovely crunch. Think: almonds, chironji, cashew nuts, raisins.
