There are food celebrations that require explanation, and then there is National Cheeseburger Day. Observed on September 18, National Cheeseburger Day celebrates one of America's most recognisable and popular comfort foods: a burger with generous amounts of cheese melted all over the patty, usually tucked into a soft bun with the familiar supporting cast of onions, pickles, tomato, lettuce, and condiments. In 2026, National Cheeseburger Day falls on Friday, making cheeseburger-centric weekend plans inevitable. 

The cheeseburger's origin story is not as tidy as its making process. The city of Pasadena credits teenage cook Lionel Sternberger with putting a slice of cheese on a hamburger in 1926, in California. Other restaurants have made competing claims, including O'Dell's in Los Angeles and Kaelin's in Louisville. Unless there is more proof, it is difficult to determine the OG creator of the beloved cheeseburger. But what is certain is that the cheeseburger became firmly established in American food culture in the early 20th century. And then it got bitten by the travel bug. 

The basic formula of a cheeseburger is wonderfully adaptable. That makes the cheeseburger very good territory for Indian flavours. But a desi cheeseburger should be more than just any random tikka or kebab placed between two buns. The interesting question to seek an answer in your creations is what happens when Indian ingredients are chosen specifically because they work well with melted cheese, a seared patty, and the familiar burger structure. Here are some uniquely desi cheeseburger combinations where the Indian influence belongs to the cheeseburger instead of making a forced cameo.

Seekh Kebab Cheeseburger With Smoked Cheese, Mint Chutney And Pickled Onion

A seekh kebab has almost everything a burger patty can require: minced meat, fat, chilli, herbs, and sufficient zesty seasoning to remain interesting beneath a proper layer of cheese. And your cheeseburger should make good use of that. Prepare a chunky lamb or mutton seekh-style patty, sear it hard enough to develop a proper crust, and lay a generous amount of smoked cheese over it while it is still in the pan.

The smokiness of the cheese echoes the char of your kebab instead of competing or overwhelming it. And then comes the mint-coriander chutney, but in moderation, along with some thinly sliced pickled onions. Mild usage of the chutney replaces the conventional burger sauce without making the sandwich taste like a kebab roll. Every bite still has the architecture of a cheeseburger, only the seasoning has taken a trip to our subcontinent.

Goan Chorizo Cheeseburger With Mature Cheddar And Vinegar Onions

Goan chorizo is ideal for the royal cheeseburger treatment because its spicy, garlicky, vinegar-led character already provides the richness and acidity a good burger needs to avoid being overtly rich. Instead of simply putting slices of sausage in a bun, fold your finely chopped Goan chorizo into a nice pork patty. As the patty cooks, the chorizo will release its fat and seasoning into the meat.

Then add your mature cheddar while the patty is still hot, letting it melt over the surface. Finish with sharply pickled onions made with vinegar, a dash of chilli and perhaps a touch of sugar. The result has the unmistakable cheeseburger combination of meat, cheese and pickles, but the flavour underneath is distinctly Goan and balanced. 

Mutton Cheeseburger With Kasundi, Caramelised Onion And Aged Cheddar

This one is built around the simple fact that mustard and rich meat are a match made in heaven. But first, whip up a juicy mutton patty with black pepper, roasted cumin and a restrained amount of chilli. Then top it with aged cheddar, whose savoury sharpness can stand up to the meat. Finally, a proper layer of deeply caramelised onions, followed by a thin, punchy layer of Bengali kasundi. Kasundi is not your average sauce Joe.

While it does its job admirably- to cut through the fat and wake up the palate- it has a pungency and sharpness that lingers in the most palate-tickling manner. Luckily, the sweetness of onions harmonises the zing of the desi mustard as well as the saltiness of the cheese. It is a cheeseburger first, but with an American and a Bengali parent actively involved.

Ghee Roast Chicken Cheeseburger With Pepper Jack And Curry Leaf Mayo

Chicken burgers often become boring precisely because the patty is treated as a blank canvas. Now there is no reason for such judgement here. Take the flavour profile of a Mangalorean ghee roast, for example. Its roasted-chilli, garlic, and spicy character works mighty well when covered with Pepper Jack cheese for gooey goodness with a gentle chilli kick. Now, if you add a homemade curry-leaf mayonnaise, with a few crisply fried curry leaves and finely sliced onions, your taste buds will not know what is about to hit them.

The creaminess of the cheese and mayo adds the appreciated indulgent dimension to your burger, while the roasted spices, flavoursome chicken and curry leaves ensure a proper Indian welcome. But remember, you are using the seasonings and flavours associated with the ghee roast to season your chicken and burger, not adding chicken curry to your bun. Though the latter is tasty in its own way, it does not fit the culinary profile here. 

Rajma Cheeseburger With Chilli Cheese, Green Chilli Pickle And Crispy Onions

A vegetarian cheeseburger can be every bit as indulgent as its meat-heavy counterpart, especially when the patty has enough personality to carry the cheese. A rajma patty seasoned with roasted cumin, black pepper and green chilli will give you a luscious centre with a crisp fried exterior. The texture is adequate for providing a good bite. Put it on a toasted bun and immediately add a slice of chilli-infused cheese while the patty is hot. 

Then comes the critical entry of green chilli pickle, not enough to overwhelm the beans, but adequate for providing that familiar acidic punch associated with ‘burger pickles’. Finish with crispy onions for a slightly sweet yet fun texture. The combination works surprisingly well because the cheese adds richness, the pickle supplies acidity, and the fried onions add more of the crunchy contrast that makes a classic cheeseburger so satisfying.
