Thinking about junk and comfort food, cheese is the first thing that comes to our mind. Melted cheese oozing out of the pizza pockets and sandwiches is everything we crave. But do you know what, comfort food need not necessarily be non-vegetarian or oozing out cheese? There are a lot of yummy vegetarian dishes that are made without cheese and are perfect for satiating your hunger pangs!
Grilled Corn Fritters
Ingredients
1. ⅓ cup yellow cornmeal
2. ¼ cup all-purpose flour
3. ½ teaspoon baking powder
4. ½ teaspoon kosher salt,
5. ½ teaspoon ground black pepper
6. A handful of parsley, finely chopped
7. ⅓ cup milk
8. 2 cups grilled corn
9. Vegetable oil
Method
1. Mix the cornmeal, flour, baking powder, salt, pepper, and parsley in a sizable bowl. Add milk and stir with a wooden spoon until the mixture is thick and well combined.
2. When all the kernels are thoroughly covered, add the grilled corn and thoroughly combine with the flour mixture.
3. In a skillet that has been preheated over medium-high heat, add some vegetable oil.
4. Scoop the corn mixture into the skillet with a 1/3 cup measuring cup, gently pressing the mound to flatten it. Cook for another 5 minutes, or until it is browned, after cooking for 5 minutes on one side. Repeat the process with the remaining corn fritters.
5. Serve right away.
Grilled Mushrooms
Ingredients
1. 16 ounces cremini mushrooms or portobello mushrooms, about 4
2. Balsamic vinegar, for drizzling
3. Olive Oil
4. Tamari, for drizzling
5. Sea salt and freshly ground black pepper
Method
1. Trim the cremini mushroom stems and/or take the portobello mushroom stems off the mushrooms to prepare them. Use a paper towel or moist cloth to wipe the caps clean. Spread a liberal amount of balsamic vinegar, olive oil, and tamari over the mushrooms on a wide platter with a rim. Apply salt and pepper liberally all over the mushrooms with your hands.
2. Put cremini mushrooms on metal skewers if you're using them (or wood skewers that have been soaked overnight).
3. Set a grill pan or outside grill to medium heat. Place the portobello mushrooms or the cremini skewers, gill side up, on the grill. Cook the mushrooms for 5 to 7 minutes on each side, or until they are soft.
Mushroom Tacos
Ingredients
1. 4 large grilled mushrooms sliced into thin strips
2. Adobo sauce for brushing (optional, for spicy mushrooms)
3. 8 corn or flour tortillas, warmed*
4. Avocado Salsa
5. Pickled Red Onions
6. Cilantro
7. Lime wedges, for serving
Method
1. Brush adobo sauce on the cut mushrooms for spicy mushrooms.
2. Put the sliced mushrooms, avocado salsa, pickled red onions, and cilantro on the tacos before assembling them.
3. Garnish with lemon slices
