Crazy For Cocoa? Try These Chocolate Kaju Katlis

Kaju Katli. The most popular mithai in any sweet box. There’s nobody who can resist the charms of this iconic Indian sweet and around Diwali, it becomes a staple in almost every household around the country. Diwali and sweets go hand in hand so when the time comes to select what gifts to hand out to friends and neighbours, this cashew-based treat is the go-to option. 

But what if you could make this delicious dessert even better? We assume that’s what people were thinking when they had the idea for Chocolate Kaju Katli. It’s a classic case of two great flavours coming together The combination of classic cocoa and the creamy cashew flavour is unmissable and will soon be the one mithai the whole family’s fighting over.

Ingredients

  • 2 cups cashew powder
  • 1 cup sugar
  • ½ cup water
  • 1 tablespoon cocoa powder
  • ½ teaspoon cardamom powder

Method: 

  • Add the cashews to a food processor or blender and blend them into a very fine powder. Measure out 1 cup of cashew powder and set aside.
  • Add ½ cup of sugar to a pan plus ¼ cup of water and mix well. Cook this sugar solution on medium heat and make a one-string sugar syrup.
  • Once the string consistency is reached add the cardamom powder.
  • Add the cashew powder, and cocoa powder and mix thoroughly. Cook this mixture for 3-4 minutes on medium flame. Switch off the flame once the mixture turns into a soft mass.
  • Once the mixture is warm, knead it very welll for 5-7 minutes.
  • Roll the cashew dough into a ¼" thick circle in between two butter papers.
  • Cut into squares or diamonds of the desired size.
