Ice Cream Bread Is The OG Two-Ingredient Dessert

If you love ice cream and you like bread, you can’t not enjoy ice cream bread once you figure out how to make it, which is a cakewalk considering it only needs two ingredients! Ice cream bread is made from ice cream and self-rising flour (alternatively, a mix of all-purpose flour and baking powder can be used). 

Though a number of recipes for ice cream bread can be found online, the most effective one is perhaps the original one. The recipe has gained substantial popularity on social media videos. A few days ago, B. Dylan Hollis, a TikTok user, discovered an ice cream bread recipe in a 1978 cookbook and showcased it in a TikTok video that has garnered almost 20 million views. 

Since then, many more TikTok users have been trying out this straightforward bread recipe. While it might seem like a budget-friendly twist on pound cake, ice cream bread’s texture and taste are more similar to a loaf. Contrary to what most people think, it's not named ice cream bread as a second choice to ice cream cake but because its consistency aligns more with quick bread than cake. 

It has a tender crumb, and it’s not dry, unlike most fruit cakes. In this particular recipe, sweetness primarily comes from the sugary topping rather than the bread itself, eventhough the ice cream is very much part of its mixture. It can also be prepared like a layered loaf cake (it will need more ingredients, of course) with ganache, buttercream filling and more than one layer. Here’s a look at the recipe for ice cream bread:

Ingredients

2 cups of your favourite ice cream (melted) 

1.5 to 2 cups of self-rising flour (or a mixture of all-purpose flour and baking powder) 

Method:

Preheat your oven to 350°F (175°C). Grease and line a standard-sized loaf pan with parchment paper. Allow the ice cream to melt until it reaches a liquid state. You can do this by leaving it at room temperature for a while or gently heating it. 

In a bowl, combine the melted ice cream with the self-rising flour. If you're using all-purpose flour, add 2 to 3 teaspoons of baking powder for every cup of flour. 

Mix until just combined; be careful not to overmix. Pour the batter into the prepared loaf pan, spreading it evenly. Place the pan in the preheated oven and bake for about 40-50 minutes, or until a toothpick inserted into the center comes out clean. 

The exact time may vary, so keep an eye on it. Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Once cooled, slice the ice cream bread and serve
