Ingredients

  • 1 cup vermicelli (sevai)
  • 2 tablespoon oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 green chilli, chopped
  • 1 onion, finely chopped
  • 1/4 cup green peas
  • 1/4 cup carrots, chopped
  • 1/4 cup capsicum, chopped
  • 1/4 cup of beans, chopped
  • Salt to taste
  • 2 cups water
  • 1 tablespoon lemon juice
  • 2 tablespoons of curry leaves
  • 2 tablespoons chopped coriander leaves

Instructions:

  • Add 2 tablespoons of oil, curry leaves, mustard, and cumin seeds in a microwave-safe bowl. 
  • Microwave at high temperature for 1-2 minutes until the seeds start to splutter and sizzle.
  • Add chopped onions, capsicum, green chilli, carrots, green peas, and beans to the bowl. 
  • Add salt and green chillies according to taste. 
  • Mix well and microwave for 3-4 minutes at high temperatures until the vegetables are cooked.
  • In the meantime, break the Vermicelli into pieces, and roast them dry. 
  • Soak it in hot water.
  • Drain the water and add the Vermicelli to the microwave bowl (that has the cooked vegetables). 
  • In this bowl, add 1 and 1/2 cups of water and salt to taste (if needed), and mix well.
