February is here, the final month of mild temperatures before March's scorching heat forces us to stay inside in the air conditioner till the monsoon hits. February is subtly romantic without even trying; it's the kind of month when time seems slow and gentle, the weather is still chilly enough to make you grab someone's sleeve, but it's warm enough in the afternoons to act as though winter is almost finished.

Shaan-E-Awadh, JW Marriott Hotel, Bengaluru

Awadhi cuisine has long been distinguished by meticulous preparation, delicate cooking, and flavours that unveil themselves over time. Through a carefully planned experience, Chef Mohammad Amir Qureshi, Sous Chef at Spice Terrace, JW Marriott Hotel Bengaluru, honours the customs of Nawabi kitchens during Shaan-e-Awadh. The experience begins with a traditional greeting, as guests are greeted with an attar-scented towel and a glass of saffron sharbat. A sealed dum pot is then unveiled at the table, and rising scents subtly set the mood for the feast to come. Highlights include the warm Gosht Yakhni Shorba, the Saboot Lobster slowly cooked in a yoghurt-based Awadhi masala, and the smoky Bhatti ka Kala Murgh Tikka. The main dishes are Koh-e-Awadh, Murgh Handi Qorma, Meher Paneer, and the aromatic Spice Dum Biryani, while Kalinga Machli, which is made with mustard, cumin, and chilli, provides a strong seafood flavour. Classic desserts like Bombay Falooda and Shahi Tukda Asal provide a familiar ending, enhanced with Awadhi-inspired drinks and well-considered non-alcoholic pairings.
