Hariyali Roast Chicken

This Mughlai recipe is from Kolkata, West Bengal. The meat is marinated in a creamy and tangy mixture of cashews, almonds, curd, and saffron. Once infused with Mughlai notes, it is cooked to add smoky notes while maintaining the juiciness. It is a starter dish that must accompany biryani or parathas to elevate the dining experience.
