Farah Khan Shares Her ‘World Famous’ Roast Chicken Recipe

Making waves on YouTube with her comical cooking videos, Farah Khan appeased her fans by finally sharing her roast chicken recipe. Enjoyed by the likes of Shah Rukh Khan, Malaika Arora and Patralekhaa, the director-choreographer’s recipe basks in a fanbase of its own. Claiming its ‘world famous’ popularity in Lokhandwala, Farah mentions that her kitchen makes the recipe to be sent out for someone or other each day. Sharing that she was demonstrating the making since she was bringing a whole roast chicken to Bollywood rapper Badshah – who she mentions enjoying eating an entire one by himself, she lets her kitchen staff Dilip to take over the prep. What’s special about her recipe, Farah says, is that the chicken does not require any cooking time in an oven or tandoor.

The recipe, which uses a handful of easy-to-find ingredients like chillies, garlic and mustard paste, took a few minutes to come together in a pan, after which the bird was submerged halfway in water. As it cooked slowly over an hour, Farah also prodded the chicken with a spoon to check if it was well done. Concluding the video with a sneak peek of being on set with the rapper, Farah signed off by promising to share his reaction in another video. While she hasn’t shared specific measurements for any of the ingredients, we’ve enlisted the recipe below for you to recreate Bollywood’s favourite roast chicken.

Ingredients

  • 1 whole chicken with skin on, cleaned
  • 1 tablespoon black peppercorns, crushed
  • 1-2 tablespoons olive oil
  • 2 teaspoons Kashmiri red chillies, coarsely ground
  • ½ teaspoon spicy chilli flakes
  • 3 teaspoons mustard paste
  • 10-12 cloves garlic, minced
  • Juice of 3 lemons
  • Salt, to taste

Method

  • Using your hands, massage the surface of the chicken and the cavity with some olive oil and salt.
  • Season the bird thoroughly with two types of red chillies on top, followed by black pepper and mustard paste.
  • Generously apply the garlic and lemon juice all over the chicken, making sure that it is coated on both sides as well as the inside.
  • Heat a teaspoon of olive oil in a pan and sear the chicken on one side before filling it with some warm water, submerging the bird halfway.
  • Cover the pan with a lid and allow it to simmer for 30 minutes, before turning the chicken over and cooking further for another 15.
  • Rest the chicken for 10-12 minutes, before transferring to a dish and serving warm.
