Diwali 2022: Tried This Gulab Ki Barfi Yet?

Indians love their mithais and this love just cannot be expressed in words. From gulab jamun to Rasmalai, from laddos to barfis, these treats have been ruling our hearts for ages. And when Diwali is here, we just cannot stop ourselves from having these treats. 

I know you are thinking of making some amazing desserts this Diwali. Just for you, we have brought an amazing recipe of ‘Gulab ki Barfi’ that could be perfect for the festival. A beautiful blend of milk, ghee, milk powder, rose petals, and pistachios, this barfi is too delicious and literally can take away all your sorrows. And the most amazing thing is its recipe has been shared by our beloved chef Ripudaman Handa. Just to keep you sorted this Diwali, here is the recipe. So, without any delay, follow the steps below and have this scrumptious barfi in no time.

Ingredients

  • 2 tsp ghee
  • 100 ml milk
  • Pinch of cardamom
  • 1 cup milk powder
  • 2 to 3 tbsp rose petals
  • 5 tbsp sugar
  • Some chopped pistachios

Method

  • Heat a pan and add ghee to it.
  • Then pour milk and stir the mixture for 2 to 3 minutes.
  • Now, add milk powder and combine everything together.
  • Stir the mixture well and make sure there are no lumps.
  • Then, add sugar and mix it well on low flame.
  • Keep stirring to prevent the mixture from burning.
  • When the mixture is thick enough, add some rose petals and chopped pistachios.
  • Turn off the flame.
  • Take a thali and grease it with ghee.
  • Place butter paper over it.
  • On the butter paper, sprinkle some rose petals and chopped pistachios.
  • Pour the mixture and spread it carefully using a spatula.
  • Again, add some rose petals and chopped pistachios.
  • Keep it in the refrigerator and let it set for 6 to 7 hours.
  • When set properly, take it out and cut it into pieces.
  • Serve and have a happy Diwali.
