Diwali 2022: Chef Pankaj Bhadouria’s Malpua Is Sheer Indulgence

What comes to your mind when you think of a dessert that has been spreading its charm for ages? You might be thinking of many desserts, one of which is Malpua, isn’t it? For those who don’t know, Malpuas are deep-fried Indian pancakes dipped into thick sugar syrup or what we call ‘chashni.’ Malpua is one of the oldest desserts as it finds its mention in the 3000-year-old Vedic literature which talks about apupa. Said to be one of the oldest forms of Malpua, they were made up of barley flour and sweetened with honey. Malpua’s name is enough to make us drool, isn’t it?

You may have seen or had several varieties of Malpua but the one we are going to tell you about is special. When we say special, we mean it because the recipe we are sharing with you has been shared by our beloved and favourite Chef Pankaj Bhadouria. Chef Pankaj took to Instagram and shared the Diwali special Malpua. She wrote, “Thank God it’s Diwali around the corner! It gives us a reason to gorge on our favourite sweets - just like these hot & syrupy Malpua!

I know it is hard for you to wait anymore. Just to make your life a little easy, here’s the recipe of Diwali special Malpua shared by Chef Pankaj. Follow the steps below and have a perfect Diwali this year.

Ingredients

  • 2 cups all-purpose flour or maida
  • ½ cup khoya
  • 1 cup milk
  • 1 tsp fennel powder
  • 1 cup sugar
  • 1 cup water
  • Pinch of cardamon powder
  • ½ cup ghee

Method

  • Take a bowl and add maida.
  • Add khoya and milk.
  • Whisk everything together and form a lump-free batter.
  • Then add fennel seed powder and mix well.
  • Meanwhile, heat one cup of water and add sugar.
  • Make one-string chashni.
  • Add cardamom powder and the chashni is ready.
  • Heat a pan and add ghee.
  • Start by pouring medium-sized batter into the ghee.
  • Let it cook until it turns brown. Flip when required.
  • When cooked, soak them in the chashni.
  • Garnish with pistachios and rose petals.
  • Serve!!
