Dal Baati Churma : Serve Rajasthan’s Royal Recipe To Your Family

As its name suggests, the dish is made up of three items- baati, dal, and churma. Dal Baati Churma is a popular Indian-originated vegetarian dish, mainly from Rajasthan. Tourists who visit Jaipur eat Dal Baati Churma for sure to get that local taste of this global dish. Well, Dal Baati Churma is no more limited to Rajasthan, but is now famous in other states too including Madhya Pradesh, Maharashtra, Vidarbha region of Gujarat and Uttar Pradesh.

There are many stories behind the formation of Dal Baati Churma. One of them actually claims that the wish was a result of an accident. Once during war days, a cook accidentally poured sugarcane juice into the Baati and thus, the Choorma was found. Another story claims that earlier people used to put Baatis inside sugar or jaggery water to keep them fresh, but that actually led to the discovery of Choorma. So, let’s try to cook this very tasty traditional food of Rajasthan.

Preparation- 30 minutes

Cooking- 1 hour 45 minutes

Serve- 3 to 4

Ingredients For Dal:

1. Boiled Dal

2. 1 cup of split green gram with skin 

3. 2 tbsp chana dal

4. 2 tbsp ghee

5. 1 tbsp cumin

6. ½ tsp asafoetida 

7. 2 tbsp garlic chopped

8. 4 tbsp onions chopped 

9. 1 green chili chopped

10. 4 tbsp tomato chopped 

11. Salt as required

12. ½ tsp turmeric powder

13. 1 tsp red chili powder 

14. 2 tbsp coriander chopped

Ingredients For Baati:

1. 1 cup wheat flour 

2. 1½ tbsp ghee

3. ½ tsp Salt

4. 4 tbsp water

Ingredients For Churma:

1. 1 tbsp ghee

2. 2 baati crushed into a coarse powder 

3. 2 tbsp almond chopped

4. ¼ tsp cardamom powder

5. 2 tbsp powdered sugar

Method:

For Dal: 

1. Take a wok and heat it. Add ghee and once the ghee gets heated, add garlic, asafoetida. and saute them for a few seconds. Now add onions, and saute till the raw smell goes away. Then add green chili, red chili powder, and turmeric powder. Give them a mix and add tomatoes, boiled dals and give them a mix. Then some chopped coriander and salt. Now give it a stir and our Dal is ready to get served.

2. For Baati: In a bowl of wheat flour, add ghee and salt. Mix them nicely till the texture of the flour resembles bread-crumbs. Add a little water and knead it into a dough. Once the dough is ready, divide it into portions. Then make a cross sign on the dough ball and the next step is to bring it together. (Tip: Do not press it too hard or leave it loose.) Bake the baatis on a gas burner, keep flipping them and ensure that they don't burn.

3. For Churma: Crush a few baatis and transfer them to a grinder jar. Crush it into a coarse powder. Then heat a pan, add ghee, cardamom pods, chopped almonds. Saute them till it's nice and fragrant. Ensure that they do not change colour. After a few seconds and in the crushed baatis. Saute them on a medium flame for 5 minutes and transfer it into a bowl. Now allow the mixture to cool down and then add powdered sugar. Mix them well and so, our Dal Baati Churma is ready to make the mouth watery.
